Salty Pretzel Cupcake Recipe

It's been a while since I displayed my baking on here but I've not done anything particularly exciting for a while either (plenty of plain little cupcakes that have been delicious, but not exciting...). However, when flicking through a magazine at my brothers house on a recent visit I spotted this delicious sounding recipe and had to 'borrow' it!

Salty Pretzel Cupcakes - yum! I'm a big fan of that weird sweet n salty combo - the first time I ever tried chocolate covered pretzels was a true revelation and I've not looked back since!

I'm afraid I'm not sure of the original source of the recipe, and I didn't actually write down the recipe properly anyway, just a list of ingredients (some of which I didn't have so had to get a bit 'creative'), so I had to fudge it a bit, but this is how I made mine:

Ingredients
5 oz butter
7 oz sugar
0.5 tsp salt
1 large egg
160 ml milk
2 tsp vanilla extract
6 oz self raising flour
2 oz pretzels

bake with pretzels

Cream your butter sugar and salt together 'til its all fluffy, add your egg, vanilla and milk and give it a good beating in. Fold in your flour then - and this is where the magic happens - scrunch up your pretzels and chuck those in your mixture!

pretzel cakes

Spoon your goop into bun cases and pop in the oven at 180 degrees for about 20 minutes. At this stage, especially warm and fresh out the oven, these are pretty delicious. The pretzels go soft and chewy but still with that salty edge, but if you can resist eating them all at this stage they get even better!

salty cakes

'How could it possibly get better than that?', I hear you ask. Well it starts with these ingredients:

3 oz butter
.25 tsp salt
1 tp vanilla extract
9 oz icing sugar
60ml double cream
1.5g pretzels (plus extras for decorating!)

Whisk up your butter, salt and vanilla. Add your icing sugar and stir it all in, then add the cream and mix 'til it's all smooth and creamy. Then add in your broken up pretzels. Dollop on top of your little cakes, smooth it out a tad and top with a whole pretzel.

They should look a bit like this! I love them... you end up getting three very different pretzel textures (chewy ones inside the actual cupcakes, slightly soft from in the frosting and crunchy still on top) so if you can get a bit of everything in your mouth in one go it's a bit of a texture sensation. Add to that the sweet and salty taste combo and you are left with a delicious, if a touch confusing, result!

Do you like salt and sugar together, or am I just a weirdo?
