Chocolate Peanut Butter Brownies

If you saw my last post where I was singing the praises of my fab new bake ware items from drinkstuff, you'll know I promised a little run down of my recent Chocolate Peanut Butter Brownies.  

Peanut butter and chocolate have to be one of the most delightful flavour combinations in existence! 

I used my clever little measuring cups to follow the original recipe, but here's how it looks with more traditional weight measurements! 

chocolate and melted butter


Brownie Mix

4oz butter
4oz plain chocolate
2oz milk chocolate
3oz plain flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3.5oz sugar
3 large eggs
2 teaspoons vanilla extract

Peanut Butter Filling

2oz butter, melted
2.5oz sugar
6oz smooth peanut butter
1/4 teaspoon salt
1/2 teaspoon vanilla extract

Melt together the butter and chocolate for the brownie mixture. Whisk in the sugar, eggs and vanilla extract. Then stir in the dry ingredients.

To make the peanut butter filling, just mix together the peanut butter, sugar and melted butter and you'll soon end up with a smooth sloppy peanutty mess. Well, that' the theory anyway - it wasn't 'til I got to this stage that I realised I'd bought crunchy peanut butter instead of smooth - ooops - so my mixture wasn't exactly the creamy delight it should have been!

Poor around a third of the brownie mixture into your baking tray, then blob in the peanut buttery filling. Cover this with the rest of the brownie mix and pop in the oven for around 40 minutes. According to the original recipe you were supposed to pop the remaining filling mix on top. . . but I didn't read this part (oops!) and it had already gone in the middle!)

Now, my peanut butter stuff ended up pretty much at the bottom of my brownies - I'm not sure if this is because I didn't put enough of the brownie mix in first or because the switch to crunchy peanut butter made it sink - so they didn't exactly look quite as they were supposed to. But they tasted so blinking good that I can hardly class them as a failure! 

It goes without saying, they go down a treat with a cup of tea!
