Layered Amaretti and Strawberry Cheesecake Dessert

I'd mentioned when I first discussed this months Degustabox that I wanted to do something fun with the Elizabeth Shaw Amaretto Flutes we got - but for reasons entirely out of my control (shh!) I didn't really have enough left to make them the main ingredient of anything, but figured they'd make a lovely finishing touch to something sweet and desserty.

Cheesecake seemed like just the thing, and it seemed like Amaretti biscuits would make a more suitable base to compliment the amaretto flavour of the chocolate. I dug out a couple of the drinkstuff margarita glasses from our blogger holiday to make them look pretty, and this is what I filled them with:

120 ml cream
250g Philadelphia
85g sugar
Dr Oetker Madagascan Vanilla Grinder
A handful of amaretti biscuits (how many you'll need might depend on the shape of your glass)
Elizabeth Shaw amaretto flavoured chocolate
I'll also start with a pre-warning that this might have been a bit 'sloppy' for a proper solid sliceable cheesecake, but will fill a glass or two nicely! In fact while I'm at it, I'll warn that though I made all this lot into two separate glasses they were in retrospect far too big for one person to eat sensibly and really should have gone to make four smaller desserts!

Whip your cream up 'til it's good n thick, and pop in the fridge for now. In a separate bowl mix together your cream cheese and sugar, and add a couple of good twists of the vanilla grinder. Liquid vanilla extract would do just fine, but the grinder has benefits - it gives a good strong flavour without adding wetness, and I like the visual effect of the ground vanilla too. Plus it smells amazing!
Pour the cream in to the cheesy mixture and stir together.

Crumble some of the biscuits into your glasses, and top with a dollop of the cheesecake mixture. You can fill this all the way to the top if you prefer but I layered mine for a bit of taste/texture variety on the way through!

From the bottom up mine went amaretti, cheesecake, strawberry, cheesecake, amaretti, cheesecake, strawberry chocolate! Once your glass is full however you see fit, top with a layer of sliced strawberries and some broken up bits of amaretto chocolate.

Like I said though, these things were deceptively big (I should have realised it was too much when I saw how much cream cheese I was putting in for two!) and much as I wanted to I didn't quite get mine done. It was close though, and I did enjoy being defeated by it!

  2. I enjoy your clearly sarcastic suggestion that there might be such a thing as "too much cheesecake" for one person to eat! These look bloody lovely, I love amaretto :)
