White Chocolate Raspberry Blondies

It was so long ago I made these now that I've almost forgotten what they taste like - but I have all the photos sat here so thought I'd share them anyway. And it might even be good inspiration for me to make them again 'cos they were goooooooood!

My daughter, she's a funny thing, decided one day she didn't like chocolate anymore. This phase didn't last long, as you might imagine, but put her off baking brownies with me on this one occasion so we settled on blondies. White chocolate and raspberry blondies - because white chocolate isn't real chocolate!                                


150g White Chocolate
100g Butter
3 eggs
175g Caster Sugar
1 tsp Vanilla Essence
200g Self Raising Flour
1 tsp baking powder
175g Raspberries
75g White Chocolate (melted, to decorate)

Firstly, preheat your oven to 180. Then break your chocolate into little pieces and melt in a bowl along with the butter over a pan of hot water. This smells magical.

In a separate bowl, whisk up the eggs, sugar and vanilla. Ideally this wants doing for about five minutes until its really thick and the whisk leaves a trail when you lift it up,... but little miss was in charge of whisking and she has a short attention span so I'm not sure ours quite got to this point, oops!

When your egg mix is ready, fold in the butter/chocolate and then the flour and baking powder.

Pour all the mixture into a lined tin and top with raspberries! Bake for 30-35 minutes (until risen but still squidgy!) and leave to cool in the tin.

Once cooled, turn out of the tin, drizzle with melted chocolate and slice cut into squares - then tuck in!

These were amongst a bunch of stuff I made for my dad's birthday and were voted as favourite by everyone who tried one!
